Grow your own leeks! You can start them from seed indoors and set out in April, or direct sow as soon as the ground can be worked. Leeks take most of the summer to bulk up, 110 days after sprouts emerge or seedlings are transplanted. They do fine in cold weather, so plan on a fall crop as well.
